Jalisco is one of the most important represent from the Mexican traditional food, but there are not enough information about the each one. Even there is not exist a complete repository of them.
This information could help any student who were involve with food in any way: technology, study, nutrition, development, health, tourism, gastronomy, etc.

This is a good idea in identifying a gap in information that you could help fill; I like the approach of considering different disciplines.
What it might need is a bit more specifics in terms of what was found in either Wikipedia/Wikimedia, and what approach you might take- will you look at adding media, creating more articles?
